Samboa Bar
A dark, classic cocktail bar in Tokyo where the bartender in a white jacket mixes really good drinks.
Sit at the counter in Ginza and start with a Cacao Negroni, so you can watch the craft up close.
During my trip to Tokyo, we ended up one evening at Samboa Bar in Ginza. Ginza has plenty of bars, and this is one I'm happy to recommend whenever someone asks where to get a cocktail in the area.
Samboa Bar is a cocktail bar in Ginza, Tokyo, with a sleek, dark, classic feel. The bartender stands behind the bar in a white jacket and works calmly and methodically. There's no unnecessary showboating, just beautiful craftsmanship, and the focus is entirely on the drinks and on making them properly.
I started with a Cacao Negroni, and it was really good. It was well balanced and full of flavor, and the cacao added an extra dimension without overpowering the classic Negroni flavors. During the evening we tried several other cocktails too, and every one delivered. The drinks were well composed, with great balance and really good flavors. You can tell someone cares about every glass that goes across the bar.
The best part of the place is sitting at the bar and watching the work. The bartender stirs and shakes at an unhurried pace and with great precision, and it's almost as enjoyable to watch as it is to drink the result. The atmosphere is subdued and relaxed, exactly what you want from a classic cocktail bar.
Samboa Bar is a really good stop in Ginza if you appreciate well-made drinks and a classic bar setting. My tip is to sit at the bar so you can see the craft up close, and to start with a Cacao Negroni. It's worth a detour and a place I'd gladly come back to.
