Bar Bulot

Bar Bulot has been on my radar list for quite a while, and the reason is simple: the steak tartare everyone talks about. The one that is often given the title of "Gothenburg's best steak tartare." Naturally, something like that sparks both curiosity and a little healthy skepticism, so I went there with high expectations and a desire to form my own opinion. The place is located inside the Saluhallen market hall in Gothenburg, right in the middle of one of the city's most food-loving quarters. It's small and pleasant, with that pared-back and slightly intimate feel that suits a place where the food gets to take center stage. Sitting and eating in the midst of the market hall bustle also gives off a wonderful energy and a sense that you're right where the food scene is actually happening. I ordered the steak tartare, of course, and quickly understood why it has its reputation. It's served beautifully between two waffles, and it's a dish that at first glance feels fairly simple but actually carries really lovely and slightly complex flavors. What lifts it is the seasoning with Sichuan pepper. Anyone who has worked with Sichuan pepper knows it's a pepper that's hard to master—easy to use too much or too little—but here they pull it off brilliantly. The balance is well thought out and the flavors sit exactly where they should. You can tell that someone has gone full nerd and truly cares about the details. I was really well received and the service was fantastic. Friendly, cheerful and knowledgeable staff who contribute to the warm and relaxed atmosphere. Together with the location in the Saluhallen, it makes the whole visit feel easygoing and welcoming. Bar Bulot lives up to its reputation. The steak tartare is good value for the quality, the flavors are well balanced and the service is top class. A small, pleasant spot in the Saluhallen that's worth a detour, and definitely a place I'd happily return to.
